What to know about processing!
- After the 90-day feed out, the cow is transported to the processor in the morning.
- The cow is harvested the next day to allow him time to calm down from transport and being in a new environment.
- The carcass is cured in the freezer for 14 days for aging.
- The carcass is processed according to the customer’s cut sheet.
- The meat is vacuum sealed and frozen right away.
- The meat is picked up frozen and delivered frozen to the customer.
- Processing time can vary between 4-6 weeks.
So, when we say a cow is going to the processors in 2-3 months, know it will be another month before the meat is ready!
